Good to Know: The Dewatsuru Awa Sake Ashitahe is a sparkling sake made from "Akita Sake Komachi", a rice suitable for sake brewing contracted in the area around the brewery, and the clear and soft water that comes from the mountains surrounding the brewery. Please enjoy the new frontiers of Japanese sake created by the skills of the brewers.
Est. in 1865 as "Yamato Sake Brewery" by the esteemed Shigeshiro Ito, 12th patriarch of the Ito lineage, nestles in the historic Naraoka, Dewa Province (presently known as Daisen City, Akita Prefecture).
Succession to the 13th generation saw Kyonosuke, refurbishing the business into the "Ochiai Sake Brewery Co., Ltd.", embedding its legacy within the very locale's name. It was within this momentous shift, the sake was christened "Dewa Tsuru" - an elegant metaphor likening the sophistication of this cherished brew to the grace of a crane, a toast befitting the essence of Dewa province.
Kyonosuke, further demonstrated his vision and leadership by erecting the Prefectural Brewing Experiment Station whilst presiding over the Akita Prefectural Sake Brewers Association. He showcased his passion for prefectural sake preservation by welcoming the noted technical leader, Masatsune Hanaoka, often hailed as the progenitor of Akita Prefecture's sake.
Beyond mere brewing excellence, Kyonosuke extended his endeavours, concerning himself with the cultivation of trainers and ameliorating their equine subjects, the rejuvenation of arable land, and fortifying local agrarian efforts. This included the conceptualization and execution of a notable philanthropic project - opening the rice fields to the local populace. Kyonosuke imprinted his legacy not only on the sake industry but also on the fabric of societal progress.
Imbued with the essence of legacy, our brewery, in this present day, crafts a "sake that etches memories into the soul of its connoisseurs", with fine grade pure rice sake forming its bedrock. “sake that remains in the hearts of those who drink it” with pure rice sake at its core.

The supporting dishes are equally strong, including excellent gambas al ajillo (garlic shrimps), a rich and comforting arroz cremoso con frutos de mar (seafood creamy rice), and bold chorizo picante a la brasa (spicy chorizo) with smoky depth. Dessert is distinctive and well judged, with the crema de queso (cream cheese) paired beautifully with PX wine, raisins, and a Tempranillo cookie. Service is relaxed and courteous, with staff providing thoughtful recommendations and attentive care throughout. The setting is welcoming and unpretentious, echoing the atmosphere of a traditional Spanish dining room - ideal for sharing plates, conversation, and good wine.
