Serving: Try it always in low temperature to keep its properties. Better for cold use as it’s a variety quite soft and fruity, and it doesn’t resist the high temperatures as well as other types. This Olive Oil goes perfect for many foods but also good for desserts and even some orange slices with honey!
Good to know: it has a nice greenish yellow colour. Over the rim of the glass, delicate aromas float which remind us of lemon peel, the leaf of the lemon tree and recently cut grass sprinkled with morning dew. Tipping the nose into the glass opens the door to a vegetable garden in which the vine tomato is dominant, but an artichoke also appears, with other green leafed vegetables and an already finished gazpacho. Fruits also appear, like banana mixed with María cookies. A touch of orange stands out with an apple at its side. Next, nuts appear such as green almonds and pistachios standing out. A memory remains, the summer mastic of the plain and a bouquet of Mediterranean aormas.
The sensations of silkiness and fullness fills the mouth and brings back the flavours of the fruits and vegetables that we perceived in the nose. The fresh almonds lengthen the taste and there is a very slight spiciness which enhances the whole experience. There is no bitterness at all, but it is the sweetness and the luminosity of the Mallorquin countryside that marks the impression of this magnificent oil.
Aubocassa was the first oil of the new generation of Spanish olive oils to be launched on the market in December 1998, marking a turning point in the concept of olive oil. It was the first commercial plantation in the "Pla de Mallorca" region and served as a catalyst for the development of cultivation in the area. The estate is located in Mallorca, in the municipality of Manacor, to the east of the island. It is an old inherited estate with mentions in documents dating back to the 12th century. Steel from new machinery is added to the history that permeates its walls, contrasting without destroying. A mixture of walls from the twelfth century and the latest technology from the twenty-first century. This integration can be appreciated with the construction of the new oil mill, located inside one of the old buildings of the property. The passage of time has left a sample of the different crops that have forged the Mallorcan countryside. The soils are limestone, formed by layers of horizontal slabs that hold accumulations of fertile clays between them. The farm exclusively grows the Arbequina variety, which grows on the 7,600 olive trees that were planted between 1996 and 1997.

The supporting dishes are equally strong, including excellent gambas al ajillo (garlic shrimps), a rich and comforting arroz cremoso con frutos de mar (seafood creamy rice), and bold chorizo picante a la brasa (spicy chorizo) with smoky depth. Dessert is distinctive and well judged, with the crema de queso (cream cheese) paired beautifully with PX wine, raisins, and a Tempranillo cookie. Service is relaxed and courteous, with staff providing thoughtful recommendations and attentive care throughout. The setting is welcoming and unpretentious, echoing the atmosphere of a traditional Spanish dining room - ideal for sharing plates, conversation, and good wine.
