Good to Know: The 1864 Castillo de Olite serves as a symbol of the opulence and royal splendor witnessed during the reign of Charles III. Its very name pays homage to one of the most opulent Royal Palaces of the medieval era in Europe. Prior to the conquest of Navarra by the kingdom of Castilla in 1510, this fortress was the residence of kings, where extravagant jousts and tournaments took place, accompanied by copious amounts of wine, naturally.
Since 1864, they have passionately crafted wine, honing their skills and expertise over the years. Bodegas Manzanos have now chosen to introduce a wine that lives up to the lofty expectations set by the palace, representing the regality that dwells within each and every one of us.
Their range's white wine is a true reflection of the region and its character. It is made exclusively from a Chardonnay grape variety and undergoes fermentation in barrels for six months, followed by blending in concrete tanks. Once clarified, it is further aged in bottles for refinement. Thanks to its acidity and pH, this wine possesses excellent aging potential.
The Bodegas Manzanos '1864 Castillo de Olite' Chardonnay displays a pale lemon yellow hue with a medium-high intensity. It exudes an aromatic bouquet of peach in syrup, white fruit, tropical fruit, and pastry with a remarkable intensity. The taste is profound and intense, offering a silky, round, and well-balanced profile.
This exquisite wine is ideally suited to be enjoyed alongside the delectable flavors of risotto, shellfish, and foie gras.

The supporting dishes are equally strong, including excellent gambas al ajillo (garlic shrimps), a rich and comforting arroz cremoso con frutos de mar (seafood creamy rice), and bold chorizo picante a la brasa (spicy chorizo) with smoky depth. Dessert is distinctive and well judged, with the crema de queso (cream cheese) paired beautifully with PX wine, raisins, and a Tempranillo cookie. Service is relaxed and courteous, with staff providing thoughtful recommendations and attentive care throughout. The setting is welcoming and unpretentious, echoing the atmosphere of a traditional Spanish dining room - ideal for sharing plates, conversation, and good wine. Txanton succeeds in delivering a genuine Spanish experience, excelling in its jamón while offering a consistently well-executed menu.
