Our suggestion for decanting time is based on bottles we tried at Txanton in 2025. We guarantee that Txanton stocks are imported and maintained in proper storage within the correct temperature and humidity suitable for wine.
Good to Know: Bodegas Margón focuses on crafting premium quality wines using the Prieto Picudo grape variety. Owned by the Martínez and González families, this winery exclusively cultivates its own vineyards in the village of Pajares de Los Oteros, located within the new D.O. Tierra de León. Overseeing this project is Raul Perez, who serves as both the manager and winemaker.
Distinguished by their ancient age, some of the vineyards owned by Bodegas Margón exceed 100 years. Furthermore, all vineyard operations are meticulously carried out by hand. Following the harvest, the grapes are stored overnight in a cooling room situated at the pinnacle of the winery. This enables the tanks to be filled naturally by gravity, with the grapes being at their optimal temperature. Rather than utilizing modern stainless steel tanks, the fermentation process takes place in French oak vats. This choice ensures a unique taste profile for the wines. Additionally, a diverse selection of French tonnelleries is available in the cellar, enabling the winery to strike a perfect balance between the power of the Prieto Picudo grapes and the added structure of oak.
The wine is crafted from vines that have been aged between 60 and 100 years old and produce a very low yield of 10 hectoliters per hectare. Every grape is meticulously handpicked and sorted before being destemmed. Fermentation takes place in temperature-controlled foudres using natural yeasts. Following this, the wine undergoes malolactic fermentation in oak barrels and receives an additional 3 months of oak aging. Finally, it undergoes a gentle filtration process before being bottled.

“Inky ruby. Pungent, smoke-accented blackcurrant and cherry pit aromas show very good clarity and pick up a floral accent with aeration. Sappy and concentrated, offering bitter cherry and dark chocolate flavors that are enlivened by a jolt of juicy acidity. Clings nicely on the finish, which features slow-building, dusty tannins and a hint of sweet mocha. These vines reportedly range from 60 to over 100 years in age. 2018 – 2024”

Dessert is distinctive and well judged, with the crema de queso (cream cheese) paired beautifully with PX wine, raisins, and a Tempranillo cookie. Service is relaxed and courteous, with staff providing thoughtful recommendations and attentive care throughout.
