Good to know: Palo Cortado is a very special wine... elegancy and uniqueness which comes from certain Jerez wines with a particular elaboration. Their fermentation and ageing in oak barrels will be crucial for their atypical characteristics developed. And the most important, you can predict the amount... it may work or not... Its very elegant in the nose and full in the mouth. Palo Cortado Tradición VORS is probably the most subtle, delicate wine made by the winery. After losing the flor, it finishes its contact with the oxygen. With an average of 40 years of age, it is the lightest and youngest of Tradicion dry sherry wines.

Tradicion Palo Cortado is bottled “en rama” (like all Tradicion wines and brandy) which means that the wine is not manipulated or treated before bottling.

The original company was founded in 1650, which hold the oldest of the sherry brands known to date. Tradicion is the newest wine project within the family after 11 generations. Focusing on very old sherry, not-chill filtered, not blended, not stabilized, not clarified, unsweetened, and with no addition of sulfates was a very unique and adventurous strategy indeed. Tradicion search for the purest style of classic sherry and aim to produce outstanding wines certified with more than thirty years of age or V.O.R.S. (Very Old Rare Sherry) or more than twenty years of age or V.O.S (Very Old Sherry).

I first visited without notice to scout the venue for a business meeting, and they kindly showed me around. This time, I returned for a private dinner.

Communication via WhatsApp was seamless and friendly, allowing us to pre-order the Gambas al Ajillo and Cochinillo. The Gambas was cooked to perfection with amazing flavor, and the Cochinillo was a masterpiece—crispy on the outside, tender and juicy on the inside.
