Good to know: As a curiosity, It was the first wine in which larger capacity barrels were used, up to 4,500 liters and has a greater diversity of vineyards with different varieties, soils, and ages of the vines, in order to deepen its freshness and fruit nuances. Prima has allowed the winery to innovate from tradition and at the same time is very accessible to everyone without loosing the depth.
Bodegas y Vinedos San Roman is a family owned winery that was founded by iconic winemaker Mariano Garcia in 1998 as Bodegas y Vinedos Maurodos. Mariano Garcia was the winemaker of Vega Sicilia for 30 years (late 60s to late 90s). His vision was to produce world class wines which balanced freshness and longevity in the bottle against the renown power of the region’s wines.
In the late 1990s his two sons Alberto and Eduardo joined the team, as director of operations and technical director respectively. They own 100 hectares of vineyard in the villages of Villaester, San Roman de Hornija, Morales de Toro and Pedrosa del Rey. The vineyards are planted mainly with Tinta de Toro, a local clone of Tempranillo that has adapted to the local region. In general the vines offer smaller berries and bunches than Tempranillo in other regions, and yields wines that offer deep colors, intense aromas and robust structure.
In recent years the winemaking team, under Eduardo’s direction, has been producing wines in a fresher style, harvested at the optimum moment to balance freshness and richness. This leads off with intense attention to farming exceptional grapes using organic methods and some biodynamic concepts and practices.
Bodegas y Viñedos San Román Prima 2022 is a wonderfully accessible and vibrant expression of the Toro appellation, crafted by the renowned García family from a blend of 85% Tinta de Toro (Tempranillo) and 15% Garnacha. What defines the 2022 vintage is its triumph over an extremely hot and arid summer; through meticulous vineyard management and perfectly timed harvests, the estate managed to protect the fruit's natural acidity while achieving deep concentration. Sourced from vines up to 50 years old and aged for 14 months in French and American oak, the 2022 Prima masterfully balances the wild, rustic intensity of Toro with remarkable elegance. It delivers alluring aromas of ripe blue fruits, sour cherry, and subtle tobacco leaf, leading to a juicy, concentrated palate framed by fine-grained tannins and a touch of toasty oak. Approachable in its youth yet structured enough to age beautifully over the next five to eight years, this robust red is a flawless companion for roasted lamb or hearty, moderately robust dishes.

Kat WynnTrustindex verifies that the original source of the review is Google. Great wine bar. They offer a wide selection of wine & the tapas are delicious. I didn't think I'd enjoy bread with olive oil as much as I did! Gambas, patè & croquettes were also delicious. We went at around 2pm and it was quiet - we just wanted something light and available. I believe they offer a variety of meats that has to be pre ordered? We would love to come back. Also, very good service. Peter LacTrustindex verifies that the original source of the review is Google. Txanton offers a focused and authentic take on Spanish dining, grounded in its role as a jamonería and its clear respect for quality produce and tradition. At the heart of the menu is the jamón. The jamón tasting menu is particularly impressive, presenting six different varieties that span the full spectrum of cured ham, each one expertly prepared and deeply flavourful. The supporting dishes are equally strong, including excellent gambas al ajillo (garlic shrimps), a rich and comforting arroz cremoso con frutos de mar (seafood creamy rice), and bold chorizo picante a la brasa (spicy chorizo) with smoky depth. Dessert is distinctive and well judged, with the crema de queso (cream cheese) paired beautifully with PX wine, raisins, and a Tempranillo cookie. Service is relaxed and courteous, with staff providing thoughtful recommendations and attentive care throughout. The setting is welcoming and unpretentious, echoing the atmosphere of a traditional Spanish dining room - ideal for sharing plates, conversation, and good wine. Txanton succeeds in delivering a genuine Spanish experience, excelling in its jamón while offering a consistently well-executed menu.
