Did you know every wheel of Cavalleria Nova cheese is a piece of living history? Since 1899, this artisanal Mahón-Menorca cheese has been hand-shaped using the traditional fogasser cotton cloth, giving it its iconic "pillow" shape. While industrial versions are pasteurized, Cavalleria Nova uses raw cow’s milk, preserving the complex, buttery flavors that have defined the island of Menorca for over a century.
