Txanton is considered the first jamoneria in the Philippines and it’s the ideal venue to immerse in learning about jamón iberico.
The type of cheese made by Cavallería Nova is from Mahón-Menorca Artesano, which is protected by the DO (Denomination of Origin) Mahón-Menorca. It is a cheese of great complexity and with a low relative salt content made from raw cow’s milk. In the mouth it presents an adequate balance between the salty and acid taste, with the presence of a spicy sensation.
This cheese is sliced and packed by professionals in-house. Weight might vary up or down by 20 grams.
