Focusing on the creation of amazing, age worthy wines from both Chardonnay and Pinot Noir, Domaine Faiveley makes use of traditional winemaking methods with a touch of modernity. The combination of modern barrel presses, custom made wooden vats and deep 19th century cellars make for a brilliant combination and unique flare for their outstanding wines.

Founded in 1825 by wine merchant, Joseph Faiveley, the domaine's humble beginnings all started with trade along the rivers and canals throughout the region. Common practice at that time was to trade wines in exchange for textiles. Led today by Eve and Erwan Faiveley, the family owns plots from several grand cru and premier cru sites all across Burgundy. Apart from their top tier Chardonnay and Pinot Noir wines, Domaine Faiveley also produces vibrant, everyday wines made from the Aligote varietal.

The 2018 vintage stands out as a highly successful "solar" year, where a wet winter built vital water reserves before a sun-drenched, dry summer yielded beautifully ripe, concentrated fruit. For Faiveley’s Puligny-Montrachet 1er Cru "Les Referts," this intense warmth amplified the natural depth and opulent character of the vineyard, which sits directly on the border of Meursault. Faiveley’s precise handling successfully anchored the vintage’s exotic, sun-ripened charm while expertly retaining the hallmark mineral tension and structural energy expected of an elite Premier Cru.

The wine opens with a seductive bouquet of citrus, apricot, and exotic fruits, beautifully framed by delicate, toasty oak. On the palate, it showcases a masterclass in harmony, blending a dense, creamy, almost buttery texture with a striking, mouthwatering saline minerality that drives into a remarkably long finish. I first visited without notice to scout the venue for a business meeting, and they kindly showed me around. This time, I returned for a private dinner.

Communication via WhatsApp was seamless and friendly, allowing us to pre-order the Gambas al Ajillo and Cochinillo. The Gambas was cooked to perfection with amazing flavor, and the Cochinillo was a masterpiece—crispy on the outside, tender and juicy on the inside.
