A 50% Iberian breed carefully selected . The swine coming from this category has been fed in the freedom of the grazing lands but not during the Montanera, which is time of the year where the acorn nuts are ready to eat. However, many of them have the chance to eat some acorn nuts left and plenty of wild plants which contribute very positively for the marbling and development of intense flavors and aromas. The curing period goes from 24 to 28 months.
