Operations are handled through the hub in Makati City where you can find a premium shop with Spanish restaurant and wine bar integrated. Txanton is considered the first jamoneria in the Philippines and it’s the ideal venue to immerse in learning about jamón iberico.

Our suggestion for decanting time is based on bottles we tried at Txanton in 2024. We guarantee that Txanton stocks are imported and maintained in proper storage within the correct temperature and humidity suitable for wine.
Good To Know: Originally crafted in 1989, this exceptional wine embodies the essence of Bolgheri and serves as the flagship of the winery. Initially a traditional Bordeaux blend, it transitioned to a single-varietal Cabernet Franc in 2001, a change that garnered immense acclaim. Named after a wild herb native to the Tuscan coast, "paleo" signifies a deep connection to the region and embodies the determination to achieve excellence.
Established in 1983 by a young couple, Eugenio Campolmi and Cinzia Merli, Le Macchiole released their first vintage in 1987. This was followed shortly by the release of their now flagship wine, Paleo in 1989. Paleo at that time, was a Bordeaux blend as was the fashion of most wines in the region at that time. In the 90's, Le Macchiole began to move towards the of production of varietal style wines and thus, both Scrio and Messorio were created. Campolmi eventually passed away in 2002, and the estate has since been run by Merli.
The 2019 vintage saw a prolonged ripening period without excessive heat. Winter was dry, but with a brief spike in humidity in January, impacting green growth. Fluctuating spring weather led to slow sprouting, while a hot and dry June followed by heavy rains resulted in vigorous shoot growth, requiring ongoing management.

The jamón tasting menu is particularly impressive, presenting six different varieties that span the full spectrum of cured ham, each one expertly prepared and deeply flavourful. The supporting dishes are equally strong, including excellent gambas al ajillo (garlic shrimps), a rich and comforting arroz cremoso con frutos de mar (seafood creamy rice), and bold chorizo picante a la brasa (spicy chorizo) with smoky depth. Dessert is distinctive and well judged, with the crema de queso (cream cheese) paired beautifully with PX wine, raisins, and a Tempranillo cookie. Service is relaxed and courteous, with staff providing thoughtful recommendations and attentive care throughout. The setting is welcoming and unpretentious, echoing the atmosphere of a traditional Spanish dining room - ideal for sharing plates, conversation, and good wine.
