The Legras brothers aims to promote their village’s qualities and diversity to ensure a great reputation as one of the Grand Crus of Champagne. This roots from their love for their village.

Legras & Haas Blanc de Blancs Grand Cru Chouilly Millésime 2014 is a refined vintage Champagne made exclusively from Chardonnay grown in the family’s historic Grand Cru vineyards in Chouilly. This cuvée captures the elegance and precision of the terroir, offering a vibrant bouquet of fresh almond, jasmine, lemon, and beeswax, with underlying notes of candied citrus and flinty minerality. Vinified with meticulous care, the wine balances lively acidity with a rich, silky texture that reflects the house’s minimalist, terroir-focused style. Already beautifully expressive after extended cellaring, it also holds excellent potential for further aging, continuing to develop in complexity and charm over the coming decade.

I first visited without notice to scout the venue for a business meeting, and they kindly showed me around. This time, I returned for a private dinner.

Communication via WhatsApp was seamless and friendly, allowing us to pre-order the Gambas al Ajillo and Cochinillo. The Gambas was cooked to perfection with amazing flavor, and the Cochinillo was a masterpiece—crispy on the outside, tender and juicy on the inside.
