Did you know that the Katealde Jamón de Pato is not made from regular ducks, but from "Foie Gras" ducks? The duck's magret develops an incredibly thick, rich layer of yellow fat and a deep, steak-like ruby-red meat that a normal duck simply does not possess. This is what gives it a melt in your mouth texture.
