Good to Know: Raúl Pérez, a renowned winegrower and esteemed winemaker of global recognition, is widely acknowledged as the pioneer behind the establishment of the new Ribeira Sacra region in Galicia. However, his talent transcends boundaries, as everything he embarks upon flourishes remarkably. Joining forces with Valquejigoso, a distinguished winery in Madrid esteemed for its unwavering commitment to terroir expression, has resulted in an awe-inspiring outcome. Amidst an enchanting landscape, Raúl seized the opportunity to craft his most distinctive rendition of Madrid Garnacha, a grape renowned worldwide for its exceptional palate-pleasing flavors.
Carpetano exemplifies the outcome of this collaborative effort. It is an exquisite Garnacha red wine that stems from well-established vines in the San Martín de Valdeiglesias region, nestled in the foothills of the Sierra de Gredos in Madrid. These vines thrive in granitic soils and endure harsh temperature extremes throughout both winter and summer, albeit with consistently low humidity levels. Adhering to responsible agricultural practices, the vines flourish among an assortment of oak trees. Harvested meticulously by hand when fully ripe, the grapes undergo a rigorous selection process right in the vineyard. Once transferred to the winery, the grapes are refrigerated and undergo further meticulous selection, ultimately being gently placed in small cone-shaped tanks and French oak vats using the force of gravity. Utilizing native yeasts, fermentation occurs spontaneously, followed by a maturation period of 12 months within 5,000-litre French oak foudres. Finally, the wine is bottled, presenting a testament to the dedication and craftsmanship involved in its creation.
Given that Raúl has extensive experience as a dedicated winemaker, actively contributing to the creation of over 200 top-tier wines globally, Carpetano serves as his first opportunity to showcase the exceptional qualities of an exquisite, refined, and exceptionally mineral Madrid Garnacha.

Kat WynnTrustindex verifies that the original source of the review is Google. Great wine bar. They offer a wide selection of wine & the tapas are delicious. I didn't think I'd enjoy bread with olive oil as much as I did! Gambas, patè & croquettes were also delicious. We went at around 2pm and it was quiet - we just wanted something light and available. I believe they offer a variety of meats that has to be pre ordered? We would love to come back. Also, very good service. Peter LacTrustindex verifies that the original source of the review is Google. Txanton offers a focused and authentic take on Spanish dining, grounded in its role as a jamonería and its clear respect for quality produce and tradition. At the heart of the menu is the jamón. The jamón tasting menu is particularly impressive, presenting six different varieties that span the full spectrum of cured ham, each one expertly prepared and deeply flavourful. The supporting dishes are equally strong, including excellent gambas al ajillo (garlic shrimps), a rich and comforting arroz cremoso con frutos de mar (seafood creamy rice), and bold chorizo picante a la brasa (spicy chorizo) with smoky depth. Dessert is distinctive and well judged, with the crema de queso (cream cheese) paired beautifully with PX wine, raisins, and a Tempranillo cookie. Service is relaxed and courteous, with staff providing thoughtful recommendations and attentive care throughout. The setting is welcoming and unpretentious, echoing the atmosphere of a traditional Spanish dining room - ideal for sharing plates, conversation, and good wine. Txanton succeeds in delivering a genuine Spanish experience, excelling in its jamón while offering a consistently well-executed menu.
