Good to know: The winery only make their Gran Reserva on exceptional years. it is a collector´s wine indeed.. and probably with one of the longer life in cellar. It is made with a selection of the best grapes from the best plots in that specific great vintage. Manual harvest, grapes from vineyards of an average age of 60 years old, transportation in boxes of 12 kg to thermo regulated cooling chambers and stored there for 24 hours prior fermentation. Selection of grapes on sorting table and separation of the bunches into shoulders and tips. This wine is elaborated from the grapes of destemmed shoulders.
Remirez de Ganuza Gran Reserva 2015 is crafted from grapes sourced from vineyards with an average age of 60 years and low yields, nestled in the foothills of Sierra Cantabria.
During the manual harvest, bunches are carefully picked and transported in 12 kg boxes to temperature-controlled cooling chambers, where they are stored for 24 hours before undergoing fermentation at 4Cº - 6Cº.
Following this, the grapes go through a meticulous manual selection process on a sorting table, with each cluster being separated into shoulders and tips. This wine is made specifically from destemmed Tempranillo shoulders.
The fermentation process takes place in stainless steel tanks and concrete vats of varying capacities and shapes. Malolactic fermentation occurs in barrel, and the wine is aged for 38 months in 225-litre new French oak barrels.

Kat WynnTrustindex verifies that the original source of the review is Google. Great wine bar. They offer a wide selection of wine & the tapas are delicious. I didn't think I'd enjoy bread with olive oil as much as I did! Gambas, patè & croquettes were also delicious. We went at around 2pm and it was quiet - we just wanted something light and available. I believe they offer a variety of meats that has to be pre ordered? We would love to come back. Also, very good service. Peter LacTrustindex verifies that the original source of the review is Google. Txanton offers a focused and authentic take on Spanish dining, grounded in its role as a jamonería and its clear respect for quality produce and tradition. At the heart of the menu is the jamón. The jamón tasting menu is particularly impressive, presenting six different varieties that span the full spectrum of cured ham, each one expertly prepared and deeply flavourful. The supporting dishes are equally strong, including excellent gambas al ajillo (garlic shrimps), a rich and comforting arroz cremoso con frutos de mar (seafood creamy rice), and bold chorizo picante a la brasa (spicy chorizo) with smoky depth. Dessert is distinctive and well judged, with the crema de queso (cream cheese) paired beautifully with PX wine, raisins, and a Tempranillo cookie. Service is relaxed and courteous, with staff providing thoughtful recommendations and attentive care throughout. The setting is welcoming and unpretentious, echoing the atmosphere of a traditional Spanish dining room - ideal for sharing plates, conversation, and good wine. Txanton succeeds in delivering a genuine Spanish experience, excelling in its jamón while offering a consistently well-executed menu.
