Viejo Maestro Goat Cheese matured with molds was inspired by the traditional cheese of goatherds. It is a delight for goat cheese lovers. It has a white edible rind, with a clean aroma to anticipate a smooth and fresh taste. With a touch of salt, this cheese has a surprise creamy texture in the mouth and an intense palate. The flavor of goat’s milk prevails. This cheese is matured for 30 days.

Serving suggestion: Bring down to room temperature for 30 minutes before consumption. Best with white wines and barrel-fermented and odorous drinks.

I first visited without notice to scout the venue for a business meeting, and they kindly showed me around. This time, I returned for a private dinner.

Communication via WhatsApp was seamless and friendly, allowing us to pre-order the Gambas al Ajillo and Cochinillo. The Gambas was cooked to perfection with amazing flavor, and the Cochinillo was a masterpiece—crispy on the outside, tender and juicy on the inside.
