Good to know: As one of the leading biodynamic wine specialists in Burgundy, combined with the expertise of winemaker Eric Germain, Domaine Vincent Girardin makes use of indigenous yeast during the fermentation process of their wines. Winemaking additives were discontinued, as were herbicides and insecticides. They also harvest grapes earlier than intended in order to ensure balance and avoiding over ripening. The use of new oak has been strictly limited, focusing more on the length the wines are stored in the barrel. This allows the wines to develop a more delicate and subtle complexity and elegance.

The Vincent Girardin Meursault Vieilles Vignes delivers what Burgundian old vine Chardonnays are meant to deliver: intensity and depth. A beautifully ripened nose of dried lemon peel and baked apple tart meld brilliantly with nuances of vanilla pastry and toasted almonds. The palate is luxuriously laden with hints of minerality and citrus notes followed by a flair tropical undertones. A medium bodied finish coats the palate with a tarty freshness followed by nutty after notes.

A prestigious domaine based in Mersault, Domaine Vincent Girardin is highly regarded for the creation of some of the best biodynamic wines in Burgundy today. Having inherited five acres of vines from his parents, whose family goes back to the 17th Century in Burgundy, 19-year-old Vincent Girardin, went out on his own in 1980 to produce the best grapes he could find in Côte de Beaune. In 2001, he shifted his focus on the purity and elegance of his wines rather than the concentrated and heavily extracted styles in the 90's. This eventually led to the revolution on the style of wines being produced in the region.

Vincent Girardin’s Meursault Vieilles Vignes 2021 is a finely crafted Chardonnay sourced from several old-vine parcels across Meursault, including Sous la Velle, Corbin, Dressolles, Clos du Cromin, and Vireuils. The fruit is hand-harvested and gently pressed, then fermented with native yeasts and aged for 15 months on fine lees in 500-liter French oak barrels, with minimal new oak and no lees stirring. The wine reveals a pale golden hue and offers aromas of toasted almond, hazelnut, citrus, white flowers, honey, and a touch of flinty minerality. On the palate, it is rich and creamy, yet lifted by vibrant acidity and a structured mineral backbone, showing layers of green apple, white peach, and subtle nutty notes that lead into a long, velvety finish. This Meursault is a harmonious blend of depth and elegance, making it a superb match for dishes like grilled shellfish, veal or poultry in creamy sauces, foie gras, or even bold cheeses.

I first visited without notice to scout the venue for a business meeting, and they kindly showed me around. This time, I returned for a private dinner.

Communication via WhatsApp was seamless and friendly, allowing us to pre-order the Gambas al Ajillo and Cochinillo. The Gambas was cooked to perfection with amazing flavor, and the Cochinillo was a masterpiece—crispy on the outside, tender and juicy on the inside.
