Good to know: The oldest label for Vino Nobile and the representation of Boscarelli's work philosophy. Their approach to Vino Nobile is the creation of an ideal wine which combines freshness, elegance, complexity and great aging potential.
Most vineyards are planted in sandy, limy soil with a percentage of silt, clay, and stones between layers. This helps contribute notes to the wine.
The grapes are manually picked and carried in crates. After de-stemming and soft pressing, the grapes are fermented in oak vats for only 2/3 of the capacity of the vats. These are put in controlled temperatures for a week.
Re-passing is done, and pulping continues when possible. This takes another 5-8 days of fermentation. Afterwards, the wine is aged in Allier or Slavonian oak casks where malolactic fermentation occurs. Maturation takes 18-24 months. They are bottled and kept for several months to age and then released to consumers.
The 2018 vintage stands out for its focus on elegance and nuance rather than sheer force. Coming off the blistering heat of 2017, the 2018 growing season brought a cooler spring and a warm summer with dramatic day-to-night temperature shifts. This preserved the natural acidity of the Sangiovese, giving the bottle a lively energy on the palate. Right now, this vintage is in a prime drinking window as its initial firm tannins have smoothed out into a silky texture, allowing the red fruit to meld seamlessly with lingering savory spice notes.
When it comes to food pairings, the wine's bright acidity and structured backbone love rich fats and savory proteins. It naturally shines alongside iconic Tuscan meats like Bistecca alla Fiorentina, roasted duck, braised pork shanks, or rack of lamb. For pasta, it begs for a hearty wild boar pappardelle or an earthy mushroom risotto, while a simple board of aged Pecorino Toscano and cured meats provides an effortless, classic pairing.
