Founded in the 1990s, the domaine is known for its minimal-intervention approach and produces wines from estate vineyards in Chablis, the broader Auxerrois region, and other parts of France. The De Moors planted most of their own vines, which now span around six hectares in Chablis—including Premier Cru sites like Vau de Vey and Mont de Milieu—and an additional four hectares in Auxerrois, where they grow varieties such as Aligoté and Saint-Bris. After severe frost and hail damaged their harvests in consecutive years, they launched a side project, Le Vendangeur Masqué, sourcing fruit from across France to craft expressive, pan-regional blends. Their commitment to terroir is evident in their use of lieu-dit labeling, as seen in the Coteau de Rosette cuvée. The estate has been organically farmed since 2005 and certified since 2008, with all wines made using native yeasts, minimal sulfur, and aging in neutral oak or stainless steel to preserve purity and character.

The 2023 Domaine Alice et Olivier de Moor Le Vendangeur Masqué Bourgogne Blanc is a lively and expressive Chardonnay made from organically farmed grapes sourced from trusted growers near Auxerre and Vézelay. Fermented naturally with indigenous yeasts and aged for 12 to 16 months in used foudres and barrels, the wine is produced without bâtonnage, filtration, or excessive sulfur, allowing its vibrant character to shine through. It opens with bright aromas of citrus, white peach, and wet stone, while the palate is crisp, mineral, and textured, offering refreshing acidity and a clean, lingering finish. This cuvée captures the energy and purity typical of De Moor’s natural winemaking style, making it an ideal partner for seafood, grilled poultry, and goat cheese.

I first visited without notice to scout the venue for a business meeting, and they kindly showed me around. This time, I returned for a private dinner.

Communication via WhatsApp was seamless and friendly, allowing us to pre-order the Gambas al Ajillo and Cochinillo. The Gambas was cooked to perfection with amazing flavor, and the Cochinillo was a masterpiece—crispy on the outside, tender and juicy on the inside.
