Good to Know: Domaine Hubert Lamy started in 1973 but developed greatly in the 1990s. Formerly, Pinot Noir were present in the vineyard but it has been replanted with Chardonnay as decided by Hubert Lamy.

The Bourgogne Blanc Les Chataigners has a fresh nose that combines the notes of grapefruit and green apples. It has a citrus zest with a high acidity level. A medium-full wine that is fresh and taut.

Hubert Lamy Bourgogne Blanc "Les Châtaigniers" 2022 is a vibrant, mineral-driven Chardonnay from high-altitude limestone soils in Saint-Aubin. Crafted by Olivier Lamy, it offers aromas of lemon zest, white flowers, green apple, and subtle hazelnut. The palate is fresh and precise, with lively acidity, a chalky texture, and a touch of oak spice. Elegant and easy to drink, it reflects the purity and finesse of white Burgundy and is ideal for enjoying now through the next few years.

Sourced from the chalky, stony limestone soils of Les Châtaigniers—a vineyard perched high above Saint-Aubin that naturally fosters tension and electric drive—this release captures the generous fruit of the 2023 growing season without sacrificing an ounce of freshness. Vinified with Lamy’s signature low-intervention focus and aged in large, neutral oak vessels, this vintage dramatically overdelivers for a regional Bourgogne Blanc, offering extraordinary purity, mineral tension, and serious aging potential.

The nose opens with an inviting, detailed bouquet of crisp green apple, lemon zest, and orange pith, interwoven with white orchard blossoms, white peach, and a touch of gunflint minerality. On the palate, it is focused and vibrant, carrying a sleek, textured core of citrus and orchard fruit supported by a firm mineral backbone, lively acidity, and a clean, saline-driven finish. I first visited without notice to scout the venue for a business meeting, and they kindly showed me around. This time, I returned for a private dinner.

Communication via WhatsApp was seamless and friendly, allowing us to pre-order the Gambas al Ajillo and Cochinillo. The Gambas was cooked to perfection with amazing flavor, and the Cochinillo was a masterpiece—crispy on the outside, tender and juicy on the inside.
