Good to Know: Domaine Jean Dauvissat is a family-run estate in Chablis, now led by Fabien Dauvissat, the fourth generation. With 22 hectares of vines across seven communes, the domaine is committed to organic farming and long, lees-aged maturation to showcase the purity of its Kimmeridgian limestone terroir. Known for elegant, mineral-driven wines, Jean Dauvissat produces classic Chablis expressions—from Petit Chablis to Premier and Grand Cru—marked by precision, depth, and ageing potential.

Jean Dauvissat Chablis Village Blanc 2019 is a refined expression of northern Burgundy’s Chardonnay, fermented and aged in stainless steel on its lees. This village-level Chablis impresses with a complex bouquet of nutty, smoky notes, beeswax, oyster shell, citrus oil, and fresh bread—an invitation to its depth. On the palate, it is lively and medium-full, with vibrant acidity and a salt-driven, saline finish accented by white peach, pear, and iodine tones ([sokolin.com][1]). Critics praise its satiny texture, chiseled energy, and impressive finishing length, making it both accessible now and well-suited for medium-term aging

This is a standout bottle that balances classic Chablis purity with textural richness—perfect with oysters, shellfish, or simply savored on its own.
