Our suggestion for decanting time is based on bottles we tried at Txanton in 2020. We guarantee that Txanton stocks are imported and maintained in proper storage within the correct temperature and humidity suitable for wine.

Domaine Daniel-Etienne Defaix has been making Chablis in the ultra traditional style since its establishment in 1978. What is also interesting to note is that the Defaix family has been making their wines in this style for more than 4 centuries in one of the most prestigious and ancient sites in what is now known as the Chablis region of Burgundy. Daniel Etienne himself is the 15th generation of the Defaix family that continues the tradition of creating age worthy Chablis.
The 2009 Domaine Daniel-Etienne Defaix Chablis Grand Cru "Blanchot" is a fuller bodied, more complex expression of Daniel Etienne Defaix' Chablis wines. Harvested from Chardonnay in the prestigious Blanchot parcel, the wine reveals exquisite honeyed and floral notes together with brilliant expressions of citrus elegance. The trademark Chablis acidity and minerality is ever present but beautifully balanced with careful malolactic fermentation which also adds delicate, creamy and buttery notes to the palate. Extended contact with lees during the winemaking process, also makes this a rounder and fuller bodied wine that possesses notes of freshly baked brioche and toast.
Domaine Daniel-Etienne Defaix was established in 1978. The Defaix family however has been making wines in the Chablis region since the 17th century. The winery is situated along 28 hectares on one of the most premier and ancient sites of kimmeridgian (limestone based, and rich in ancient oyster fossils) soil in Burgundy.

The jamón tasting menu is particularly impressive, presenting six different varieties that span the full spectrum of cured ham, each one expertly prepared and deeply flavourful. The supporting dishes are equally strong, including excellent gambas al ajillo (garlic shrimps), a rich and comforting arroz cremoso con frutos de mar (seafood creamy rice), and bold chorizo picante a la brasa (spicy chorizo) with smoky depth. Dessert is distinctive and well judged, with the crema de queso (cream cheese) paired beautifully with PX wine, raisins, and a Tempranillo cookie. Service is relaxed and courteous, with staff providing thoughtful recommendations and attentive care throughout. The setting is welcoming and unpretentious, echoing the atmosphere of a traditional Spanish dining room - ideal for sharing plates, conversation, and good wine.
