Our suggestion for decanting time is based on bottles we tried at Txanton in 2020. We guarantee that Txanton stocks are imported and maintained in proper storage within the correct temperature and humidity suitable for wine.
Good To Know: As one of the most iconic and globally renowned Spanish wine producers, the Eguren family, owns several notable wineries throughout all of Spain. Their most popular and arguably most iconic winery, Sierra Cantabria is located in the heart of the town of San Vicente de la Sonsierra in Rioja Alta, and makes a range of classic Rioja wines from 19 vineyard sites spread out across a total of 65 hectares (160 acres).
The Sierra Cantabria Finca el Bosque 2007 has matured nicely in our cellars. Tasted in 2020, the wine remains powerful and intensely ripe. Crushed blackberries, cassis and nuances of dark chocolate dominate the aroma. Toasted vanillin oak and baking spice add a mature edge to the nose as well. On the palate, the wine remains youthful and plump, nuances of balsamic and wet stone add an earthy touch to its otherwise fruit dominant profile. The long finish is coated in tannins that despite age has remained powerful and intense but with a precise, sinewy tension that is amazingly delectable especially when paired with fatty meats.
Officially founded in 1870 by the prominent winemaking Eguren family, Sierra Cantabria is now led by fourth generation and leading Spanish winemaker, Marcus Eguren. Apart from the historical Sierra Cantabria winery, the Eguren family also owns equally prestigious wineries such as: Señorio de San Vicente in Rioja Alavesa, Dominio de Eguren in the Paganos province, and the more recent, Teso La Monja estate in Toro.

The supporting dishes are equally strong, including excellent gambas al ajillo (garlic shrimps), a rich and comforting arroz cremoso con frutos de mar (seafood creamy rice), and bold chorizo picante a la brasa (spicy chorizo) with smoky depth. Dessert is distinctive and well judged, with the crema de queso (cream cheese) paired beautifully with PX wine, raisins, and a Tempranillo cookie. Service is relaxed and courteous, with staff providing thoughtful recommendations and attentive care throughout. The setting is welcoming and unpretentious, echoing the atmosphere of a traditional Spanish dining room - ideal for sharing plates, conversation, and good wine.
