Good To Know: Domaine Vincent Dancer is a small, family-run estate based in Chassagne-Montrachet, Burgundy, established in 1996 by Vincent Dancer, an Alsatian-born engineer who turned to winemaking. Starting with just a few hectares of inherited vineyards, the domaine has since expanded to about six hectares, including parcels in Puligny-Montrachet, Meursault, Pommard, and Beaune. Dancer was the first grower in Chassagne to achieve organic certification, which he obtained in 2012, and his winemaking philosophy is rooted in minimal intervention—favoring hand harvesting, indigenous yeast fermentation, no bâtonnage, and bottling without fining or filtration. His son Théo now works alongside him, continuing the focus on producing wines that reflect the purity and character of their terroir. Domaine Vincent Dancer is especially known for its crystalline, precise white Burgundies, ranging from Bourgogne Blanc to Premier and Grand Cru expressions like Meursault Perrières and Chevalier-Montrachet. With a small production and strong cult following, the wines are highly allocated and sought after for their elegance, structure, and authenticity.
The 2022 Vincent Dancer Bourgogne Chardonnay is an organically farmed, small-production white wine crafted from parcels in Meursault and Puligny-Montrachet. Made with indigenous yeasts and aged for about 17 months—mostly in neutral oak and then in stainless steel—it is bottled unfined and unfiltered to preserve its purity. The wine offers a vibrant and mineral-driven profile, with notes of citrus, green apple, and subtle flint, balanced by a lean yet textured palate. Known for his elegant, terroir-expressive style, Vincent Dancer delivers a Bourgogne Blanc that overdelivers in finesse and clarity, making it a favorite among fans of naturally made, understated white Burgundy.

Kat WynnTrustindex verifies that the original source of the review is Google. Great wine bar. They offer a wide selection of wine & the tapas are delicious. I didn't think I'd enjoy bread with olive oil as much as I did! Gambas, patè & croquettes were also delicious. We went at around 2pm and it was quiet - we just wanted something light and available. I believe they offer a variety of meats that has to be pre ordered? We would love to come back. Also, very good service. Peter LacTrustindex verifies that the original source of the review is Google. Txanton offers a focused and authentic take on Spanish dining, grounded in its role as a jamonería and its clear respect for quality produce and tradition. At the heart of the menu is the jamón. The jamón tasting menu is particularly impressive, presenting six different varieties that span the full spectrum of cured ham, each one expertly prepared and deeply flavourful. The supporting dishes are equally strong, including excellent gambas al ajillo (garlic shrimps), a rich and comforting arroz cremoso con frutos de mar (seafood creamy rice), and bold chorizo picante a la brasa (spicy chorizo) with smoky depth. Dessert is distinctive and well judged, with the crema de queso (cream cheese) paired beautifully with PX wine, raisins, and a Tempranillo cookie. Service is relaxed and courteous, with staff providing thoughtful recommendations and attentive care throughout. The setting is welcoming and unpretentious, echoing the atmosphere of a traditional Spanish dining room - ideal for sharing plates, conversation, and good wine. Txanton succeeds in delivering a genuine Spanish experience, excelling in its jamón while offering a consistently well-executed menu.
