Good to Know: The rich, dark ruby hue of the robe extends to a deep black cherry. The distinctive aroma of Chambertin is liquorice, though scents of blackcurrant, stone fruit, moss, undergrowth and spices are also bound to tantalise your olfactory senses. On the palate, power, opulence, and elegance unite to form a full-bodied and complex profile, rich in sap and characterised by luxurious succulence.
The robust tannins of Chambertin enable an intriguing contrast of textures between its aromatic complexity and its opulence. "Coq au Chambertin" is certainly a commendable pairing, and if you only have a single bottle of Chambertin, incorporate it in the sauce and serve another wine with the dish!
Chambertin requires a minimum period of ten years for ageing, and its longevity can be exceptionally impressive.
Historically, Chambertin came into existence in 640 AD, when the nuns of Bèze Abbey, north of Dijon, expanded their landholding. The vineyard manager of the nuns was Mr Bertin, who visited his vineyard field daily.
