Good To Know: Apart from being known for their amazing, centuries old Pinot Noir production and quality, Domaine Pavelot also produces two wines exclusively made from Chardonnay, their Corton Grand Cru and village level Savigny les Beaune.

Established since the 17th century and passed down from generation to generation, it wasn't until the 1980's when Domaine Pavelot, under the leadership of Jean Marc Pavelot, extended its reach to an international level. Jean-Marc's son, Hugues, who has also become a key member of the winemaking team in Domaine Pavelot, joined the winery in 1997. Today, they have become renowned producers in the region and particularly famed for their Les Narbantons, La Dominode and Aux Gravains Premier Cru wines in the Savigny les Beaune sub region of Burgundy.

The 2021 vintage highlights the vibrant freshness, transparency, and classical elegance of traditional Burgundian Pinot Noir, perfectly suited to the cooler, elevated terroir of Savigny-lès-Beaune. Sourced from the south-facing Aux Guettes Premier Cru—perched high on a steep hillside with thin, limestone-rich soils over hard rock—this vineyard naturally yields small crops with exceptional focus. Facing a demanding, low-yielding growing season, Domaine Jean-Marc et Hugues Pavelot relied on meticulous viticulture to craft a tensile, highly delineated wine that showcases the site's signature mineral energy and aromatic purity over heavy extraction.

The nose opens with an inviting bouquet of fresh raspberry, cranberry, and wild dark fruits, complemented by subtle floral aromas, crushed herbs, and gentle oak spice. On the palate, it is airy yet reassuringly structured, delivering a medium-bodied core of bright red fruit supported by silky, fine-grained tannins, vibrant acidity, and an integrated touch of creaminess from well-judged barrel aging. To complement its lifted fruit profile and savory mineral finish, pair this bottle with roasted duck breast, herb-crusted guinea fowl, wild mushroom pappardelle, or classic Burgundian cheeses such as aged Comté.
