Good To Know: Apart from being known for their amazing, centuries old Pinot Noir production and quality, Domaine Pavelot also produces two wines exclusively made from Chardonnay, their Corton Grand Cru and village level Savigny les Beaune.

Established since the 17th century and passed down from generation to generation, it wasn't until the 1980's when Domaine Pavelot, under the leadership of Jean Marc Pavelot, extended its reach to an international level. Jean-Marc's son, Hugues, who has also become a key member of the winemaking team in Domaine Pavelot, joined the winery in 1997. Today, they have become renowned producers in the region and particularly famed for their Les Narbantons, La Dominode and Aux Gravains Premier Cru wines in the Savigny les Beaune sub region of Burgundy.

The 2021 vintage marks a triumphant return to classicism for Domaine Jean-Marc et Hugues Pavelot, highlighting the cool-climate precision and aromatic transparency of traditional Burgundian Pinot Noir. Sourced from the south-facing Aux Gravains Premier Cru—a vineyard whose gravelly limestone and clay soils give the site its name and signature mineral drive—this challenging, low-yielding vintage required meticulous viticultural care. The result is a wine that favors tension, energy, and structural integrity, capturing a pure, graphite-driven expression of Savigny-lès-Beaune that promises excellent longevity in the cellar.

The nose reveals an expressive and perfumed bouquet of wild raspberry, red cherry, and poached plum, lifted by nuances of desiccated orange peel, crushed floral notes, and gentle baking spice. On the palate, it is linear and focused, delivering a sapid core of red fruit framed by silky, fine-grained tannins, vibrant acidity, and a long, savory finish with subtle earthy undercurrents. To highlight its bright fruit purity and refined structure, pair this bottle with roasted duck breast, lean pork tenderloin with a fruit reduction, wild mushroom ragout, or classic semi-firm Burgundian cheeses like Comté.

I first visited without notice to scout the venue for a business meeting, and they kindly showed me around. This time, I returned for a private dinner.

Communication via WhatsApp was seamless and friendly, allowing us to pre-order the Gambas al Ajillo and Cochinillo. The Gambas was cooked to perfection with amazing flavor, and the Cochinillo was a masterpiece—crispy on the outside, tender and juicy on the inside.
