Good To Know: Paride Iaretti and Company are winemakers in Gattinara. A single vine - the Nebbiolo sits on 4.5 hectares of land. Together with the founding partner, Paride, the vineyards are taken greate care of as well as the vinification as assisted by Mattia. This wine company welcomed new shareholders in 2015 with different skills sand professional experiences. A common goal to grow with respect to quality.

Paride Iaretti Gattinara Riserva 2018 is a classic, age-worthy expression of Nebbiolo from the volcanic-porphyry soils of Gattinara. Made from 40-year-old vines, the wine undergoes a 30-day maceration with manual extraction, followed by natural malolactic fermentation in stainless steel. It is then aged for 12 months in tonneaux and 24 months in large Slavonian oak barrels. In the glass, it shows a garnet-red color with orange reflections and opens with layered aromas of rose, violet, dried figs, red berries, licorice, and spice. On the palate, it is warm and dry, with firm yet elegant tannins, bright acidity, and a long, savory finish marked by mineral undertones. This Riserva captures the soul of Gattinara and is built to evolve beautifully over 15 years or more.

I first visited without notice to scout the venue for a business meeting, and they kindly showed me around. This time, I returned for a private dinner.

Communication via WhatsApp was seamless and friendly, allowing us to pre-order the Gambas al Ajillo and Cochinillo. The Gambas was cooked to perfection with amazing flavor, and the Cochinillo was a masterpiece—crispy on the outside, tender and juicy on the inside.
