Good to Know: In 775, the Emperor Charlemagne generously bestowed this particular vine to a Catholic institution situated in Saulieu. Remarkably, the vine has been meticulously preserved for an impressive span of 1000 years. Positioned atop its hill, it stands as the solitary grand cru that basks in sunlight from dawn till dusk. Spanning across a vast area of 52 hectares, Corton Charlemagne stretches from Ladoix-Serrigny in the East, passing through Aloxe-Corton in the South, and finally reaching Pernand-Vergelesses in the West.

The esteemed Laurent Ponsot company sources its supplies from these three villages, collaborating with six distinct producers. This unique combination enables them to craft a wine that authentically represents the appellation, harnessing its wealth derived from its diverse characteristics.

The resulting wines exude refinement, precision, and an exquisite fragrance of floral and mineral notes. They are an impeccable choice to accompany fish, shellfish, or a delectable cheese platter, tastefully enhancing their flavors.

I first visited without notice to scout the venue for a business meeting, and they kindly showed me around. This time, I returned for a private dinner.

Communication via WhatsApp was seamless and friendly, allowing us to pre-order the Gambas al Ajillo and Cochinillo. The Gambas was cooked to perfection with amazing flavor, and the Cochinillo was a masterpiece—crispy on the outside, tender and juicy on the inside.
