When young, the spontaneous fragrance of these wines is a symphony of strawberry, blackberry, violet, mignonette, and rose. Aging only deepens their complexity, adding accents of gamey undergrowth to their bouquet and a dash of licorice. Whole and robust, the Gevrey-Chambertin appellation impresses with its firm structure, velvety tannins, and a richness that never fades. Enjoyed young or aged, the wine's true distinction lies in its longevity, making it a fitting selection for exploring various vintages.

Pairing well with saucy meats, some connoisseurs often serve Gevrey-Chambertin with pike perch fillet or tuna in a red wine sauce.

I first visited without notice to scout the venue for a business meeting, and they kindly showed me around. This time, I returned for a private dinner.

Communication via WhatsApp was seamless and friendly, allowing us to pre-order the Gambas al Ajillo and Cochinillo. The Gambas was cooked to perfection with amazing flavor, and the Cochinillo was a masterpiece—crispy on the outside, tender and juicy on the inside.
